How to record mono track with Stereo IAA insert?

If I want to record a mono instrument, for example my guitar, through a stereo IAA insert, like ToneStack, the signal doesn't seem to be coming out in stereo. Then, halfway through recording, Auria Pro seems to figure out that something should be stereo, and it converts my track to stereo, with my guitar only recorded on the right channel, and whatever I had plugged in on input 1 recorded on the left. Is this a bug?

What is the correct setup to record a mono instrument, run through a stereo effect, and hear the effect rendered in stereo?

Auria will convert a mono track into a stereo track if you ad a mono to stereo version of a plugin. That's probably what you're seeing. Only the built-in Auria plugins can be used this way, though as IAA has no mechanism for mono (the IAA spec only works in stereo).
