suppressing midi input on some tracks while recording a new one

My project has numerous midi instruments, including piano, hi-hat, snare, kick, bass and guitar. I want to play the guitar midi instrument on my keyboard, and play along with my other tracks already recorded so I can get a better idea of what I want the guitar part to sound like. But as is, when I touch a key, all the midi instruments sound, unless I have them muted. But if mute everything except the midi guitar track then the only thing I hear when playing back the project is the midi guitar. So, how do I hear all midi tracks, but only send midi input to the guitar track? Does this even make sense?

You don’t have to “mute” your other tracks, but to turn the MIDI input OFF so they don’t receive MIDI data from your keyboard.
