...I.e. Using two Ipads, both wih Auria Installed, and get the audio from two sources with e.g. two mono interfaces. Will, in that case, the sound easily end up in one of the devices, or on separate Ipads?

Auria has a similar feature called AuriaLink. It allows two iPads running Auria to record or play in sync, giving you up to 48 tracks of recording, or 96 tracks of playback. The only thing it doesn't do is transfer audio back and forth. You can do this using iFunBox/iTunes or Dropbox.

...That was extremely quick! I just went for a coffee. I guessed that Aurialink wouldn't transfer sound.
It is good to know that getting second Ipad may delay the need of a new interface as I could get e.g. Apogee Jam or something similar in addition to my older Apogee One. (I rarely record more than one channel, so my kids would be using my Ipad3.)
